
It’s Bollywood Babylon at Vermilion on New Year’s Eve

Vermilion (actually, the place is called At Vermilion. But let’s just call it Vermilion) wants business on New Year’s Eve. How much do they want it? Enough that the place has created what looks like the most elaborate New Year’s Eve celebration in town, every bit as likably overwrought as the place itself. The theme is “Night of Seven Sins,” and there are seven courses, each representing a different sin, seven spice mixtures made tableside, seven champagne fizzes, and of course, all this amid Bollywood dancers, Indian fusion DJs, and “seven surprise giveaways.” Rohini Dey will be there too, of course, and if your sin-heavy conscience pangs you at the expense ($200 for the main seating) consider that part of the proceeds go to the America India Foundation and their outreach to feed poor children. OK? Just don’t think about that while you’re living it up with the following seven courses (sin descriptions courtesy Vermilion.)

lime jalapeno foam, champagne jelly, ginger caviar, apple ceviche shards, chipotle mole dust, chile vinegar emulsion, garam masala
ENVY “don’t you want to be hot when you’re cold and cold when you’re hot?”

tomatillo gazpacho + lobster bisque
PRIDE “the tandoor is the pride of Indian cuisine and frankly, it’s what real men eat”
a tandoor duo: mysore lamb chop + chicken kabab
over minty, red onion salad, chutney
AVARICE “because you are already on your fourth course and you still want more”
blue corn crusted scallop
kali mirch calabasa, goat cheese
GLUTTONY “see above”
lobster caldeirada de peixe
brazilian seafood vegetable stew, with an Indian kick
WRATH “a dish with pure fire and heat from both subcontinents”
chimichurri filet mignon
classic Argentine marinade + “kadai”
