Nicole Kaplan Out at the Plaza; Deb Snyder in at Bussaco

The world of pastry chefs is in crisis, and something of a zero-sum game these days. Not that many people have the capital and the commitment to pay a full-time pastry chef. That was the case for Nicole Kaplan, who was let go by The Plaza as a cost-cutting measure, despite the fine quality of her work. There’s no doubt that the former Eleven Madison Park and Del Posto tocque will be back in the kitchen making her cakes and pies soon. We look forward to that day. But on the good news side, Deb Snyder (Lever House, Alto) is now cooking up a fantastic dessert program for Bussaco, including the farm cream panna cotta that was such a big hit at Alto.
