Drew and Paul Lift the Curtain on Corton

Drew Nieporent characterizes Corton, his much-awaited successor to Montrachet, as “three-star dining stripped down.” The power without the frippery; we get it. Corton is much more than that, though: the restaurant is packed with history, and pregnant with portents and auspices. Will chef Paul Liebrandt shed his reputation as a temperamental mollecularist and be recognized as one of the great chefs of his generation? Will Nieporent show that he is still a major generative force at the highest level of gastronomy? Will New York support a great restaurant downtown, even in a depression? Say this for the two men: they’re both putting out on the line, and everybody stands to be judged. Here’s a peak behind the scenes of the opening of the year.
