
Ed Cotton Confirmed at BLT Market; Carmellini Not Going Into the Tasting Room Space After All
So now that The Feedbag is in full effect, our collective ear is back to the ground again, and this is what we’re hearing.
1. Andrew Carmellini, contrary to prior reports, will not be doing his new Italian restaurant in the old Tasting Room space. He liked the space, and obviously was close with Colin so would have liked to take it, but the deal fell through. He’s still looking at spaces.
2. Ed Cotton, as Eater predicted last month, is indeed the new chef de cuisine at BLT Market. Cotton, in the Eater post, was IDd as the interim Veritas chef, but his background is really that of the Daniel finishing school, the Harvard of the restaurant business. (Prior to Daniel, Cotton worked in the Todd English empire, the UMass of the restaurant business.) Cotton is currently in the saddle, making things happen now.
3. Bussaco is making fresh mozzarella as good as any in the city, although in tiny portions. The chef, a Bernardin alumni, is also a fine hand at fish and his fried baby chicken is among the best in the city.
