Willis Loughhead in as Chef de Cuisine at Table 8

Willis Loughhead, the talented former Chef de Cuisine at Country, has landed on his fee at Table 8, Govind Armstrong’s stylish restaurant in the Cooper Square Hotel. Loughhead’s full title is Executive Chef of the Cooper Square Hotel and Chef de Cuisine at Table 8, but he’ll be doing a lot more than just running Armstrong’s kitchen — he’s back to his old salty tricks, curing meat and fish, and helping to create the menus for two lounges, two bars, a 120-seat dining room, and a “salt bar”  featuring various cured and marinated animal products. “The primary reason why I came on board is that Govind is extremely passionate and like-minded in all things culinary and life-related. We’re both very motivated towards seasonal stuff, into curing everything in house, alternative cures for seafood, and all kinds of new marination techniques. Govind is super cool. I think that at this point there needs to be someone like him and someone like me, even-tempered and into teaching, and learning too. He’s not a screamer and a head case, and neither am I.” Table 8 is expected to open in January.
